If you’ve never had chorizo, then you’re missing out big time; Spanish rice with chorizo is chock full of flavor and has a pleasant texture but has a different palette than that of sausage. When selecting your chorizo, make sure you check the nutritional panel on it as there can be diet discrepancies between the brands. 

Add the chorizo after the rice has been cooked to ensure the sausage doesn’t dry out and become rigid. When selecting rice, know that brown rice may take longer to cook than white rice variants. 

Spanish Rice and Chorizo is by no means a healthy dish, but it is a tasty one that will give you those good feels in your soul as you eat it. This meal needs only one pot, and it keeps in the refrigerator well throughout the week, allowing the flavors to become stronger. 

Spanish Rice with Chorizo Ingredients

  • 1 lb. Chorizo 
  • 1 can black beans, drained and rinsed
  • 1 can Rotel Diced tomatoes and chilies
  • 1 medium sweet bell pepper, diced
  • 1 medium sweet bell pepper, diced
  • 1 small yellow onion, chopped
  • 1 cup uncooked rice
  • 1 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

Instructions

  1. Set the Chorizo aside, add all the ingredients to the pot or high-sided pan: mix ingredients and cover. 
  2. Bring the mixture to a boil and then reduce to a simmer. Cook for 10 minutes, stirring occasionally. 
  3. Add the sausage and allow it to simmer for 10-15 minutes. 
  4. Allow the pot to rest uncovered for 5-10 minutes for cooling.
