Spanish Rice with Chorizo Ingredients
- 1 lb. Chorizo
- 1 can black beans, drained and rinsed
- 1 can Rotel Diced tomatoes and chilies
- 1 medium sweet bell pepper, diced
- 1 medium sweet bell pepper, diced
- 1 small yellow onion, chopped
- 1 cup uncooked rice
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
Instructions
- Set the Chorizo aside, add all the ingredients to the pot or high-sided pan: mix ingredients and cover.
- Bring the mixture to a boil and then reduce to a simmer. Cook for 10 minutes, stirring occasionally.
- Add the sausage and allow it to simmer for 10-15 minutes.
- Allow the pot to rest uncovered for 5-10 minutes for cooling.
