Sweet Potato Soup Ingredients
- Coconut Oil – 1 tbsp
- Sweet Potatoes – 2
- Vegetable Broth – 3 cups
- Onion – 1 tsp dried, minced
- Garlic Powder – 1/2 tsp
- Cinnamon – 1/2 tsp
- Honey – 2 tbsp
- Almond Milk – 1 cup
- Salt – to taste
- Pepper – to taste
Directions
- Peel sweet potatoes and cut into medium-sized cubes
- Add the vegetable broth, cubed potatoes and coconut oil to a large pot
- Boil for approximately 5 minutes
- Reduce heat to medium and cook for 10 minutes or until the sweet potatoes are soft.
- Pour the vegetable broth and sweet potatoes into a blender and puree them
- Pour the contents of the blender back to the pot
- Add the onion, garlic, cinnamon, honey and almond milk
- Cook until warm
